Welcome to Maison, a cosy pop-up bakery nestled in the heart of Carrickfergus, right inside the historic Scotch Quarter. We’re all about viennoiserie, seasonal buns, and those little home-inspired treats that make you pause, take a breath, and smile. 

Hi, I’m Erin, the baker behind Maison.

Maison began as a simple idea: create baked goods that feel special, welcoming, and accessible — especially for people with allergies or intolerances who are so often overlooked. Everything here is plant-based, thoughtfully made, and rooted in a love for flavours that feel nostalgic and comforting.

Baking has been a part of my life for as long as I can remember. I grew up in New Braunfels, Texas, and my first real job was in a small hometown bakery — I’d bake in the early mornings before heading off to high school classes. That rhythm, that sense of purpose, stuck with me.

Nearly 13 years ago, a baking internship took me to Florence, Italy, and shortly after, life brought me to Northern Ireland, where I’ve stayed ever since. I fell in love with the place, the people, and the feeling of home I found here. Even through years of different jobs and paths, I always found myself coming back to baking and working with my hands.

Maison is the result of that pull — a pop-up bakery in the Scotch Quarter of Carrickfergus where I get to share the things I love to make: pastries, breads, sweet little surprises, and rotating weekend specials.

When I’m not in the kitchen, I’m probably out for a run, enjoying slow moments with my family, or hanging out with our two cats, Socks and William Shakespaw.
